Beef Rendang Recipe (Indonesian Style)

Ingredients:
1 kg beef (preferably with a bit of fat, such as shank or brisket)
1 liter thick coconut milk (from 2 coconuts)
500 ml thin coconut milk
2 stalks lemongrass, bruised
4 kaffir lime leaves
2 bay leaves
2 cm asam kandis (or 1 tsp tamarind water)
Salt and sugar to taste
Ground Spices:
10 shallots
5 cloves garlic
5 candlenuts, roasted
2 cm ginger
2 cm galangal
3 cm turmeric
5 red chili peppers
10 red bird’s eye chilies (adjust to taste)
1 tbsp coriander seeds, roasted
1/2 tsp cumin seeds, roasted
Cooking Instructions:
1. Prepare the Beef: Cut the beef into preferred sizes, wash, and drain.
2. Sauté the Spices: Heat a little oil in a pan, then sauté the ground spices along with lemongrass, kaffir lime leaves, and bay leaves until fragrant.
3. Add the Beef: Stir the beef into the spice mixture and cook until it changes color.
4. Pour in Coconut Milk: Add thin coconut milk first, stir occasionally, and let it simmer until the liquid reduces.
5. Add Thick Coconut Milk: Pour in thick coconut milk, stir continuously over low heat to prevent curdling.
6. Season and Slow Cook: Add asam kandis (or tamarind water), salt, and sugar. Let the beef cook over low heat until tender and the sauce thickens into a dark, rich consistency (around 3–4 hours).
7. Serve: Once the oil starts to separate and the beef is fully coated with the thickened sauce, remove from heat and serve
warm with rice.
