Ingredients
For the Quinoa:
1 cup quinoa (rinsed)
2 cups water or vegetable broth
½ tsp salt
For the Toppings:
½ cup cherry tomatoes (halved)
½ cup cucumber (diced)
¼ cup red onion (thinly sliced)
¼ cup kalamata olives (sliced)
¼ cup feta cheese (crumbled)
½ cup chickpeas (cooked or canned, drained)
1 tbsp fresh parsley (chopped)
For the Dressing:
3 tbsp extra virgin olive oil
1 tbsp red wine vinegar
1 tsp lemon juice
½ tsp dried oregano
1 clove garlic (minced)
Salt & pepper to taste
Instructions
1. Cook the Quinoa
1. In a saucepan, bring 2 cups of water or broth to a boil.
2. Add rinsed quinoa and salt, then reduce heat to low.
3. Cover and simmer for about 15 minutes, or until the quinoa is tender and water is absorbed.
4. Remove from heat, fluff with a fork, and let it cool slightly.
2. Prepare the Dressing
1. In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, oregano, garlic, salt, and pepper.
2. Set aside to let the flavors blend.
3. Assemble the Bowl
1. In a large bowl, add the cooked quinoa as the base.
2. Top with cherry tomatoes, cucumber, red onion, olives, chickpeas, and feta cheese.
3. Drizzle with the Greek dressing and gently toss to combine.
4. Garnish with fresh parsley.
