Grilled Fish (Pesce alla Griglia) is a classic Italian dish that highlights fresh fish, simple seasoning, and the smoky flavor of grilling. This recipe is easy to make and perfect for a light, healthy meal.
Ingredients
For the Fish:
2 whole sea bass, snapper, or branzino (cleaned and scaled) or 2 fillets of any firm white fish
3 tbsp extra virgin olive oil
2 tbsp lemon juice
2 cloves garlic (minced)
1 tsp sea salt
½ tsp black pepper
1 tsp dried oregano
1 tsp fresh rosemary (chopped)
1 tsp fresh thyme (chopped)
1 tbsp fresh parsley (chopped, for garnish)
Lemon wedges (for serving)
Instructions
1. Prepare the Fish
1. If using whole fish:
Make 2-3 diagonal cuts on both sides of the fish to help absorb the seasoning.
2. If using fillets:
Pat dry with a paper towel to remove excess moisture.
2. Marinate the Fish
1. In a small bowl, mix olive oil, lemon juice, garlic, salt, pepper, oregano, rosemary, and thyme.
2. Brush the marinade generously on both sides of the fish, including inside the cuts (for whole fish).
3. Let it marinate for at least 15-30 minutes for extra flavor.
3. Grill the Fish
1. Preheat the grill to medium-high heat (or use a grill pan).
2. Lightly oil the grill grates to prevent sticking.
3. Place the fish on the grill:
Whole fish: Grill for 4-5 minutes per side, flipping carefully with a spatula.
Fillets: Grill for 3-4 minutes per side, until golden brown and flaky.
4. Remove from the grill and let it rest for 2 minutes.
---
4. Serve
Transfer to a plate and sprinkle with fresh parsley.
Serve with lemon wedges for a fresh citrusy touch.
Pair with grilled vegetables, roasted potatoes, or a fresh Italian salad.
